I am a French, and Italian trained chef. I have a catering company under the name of Ummi Foods in Chicago. I have been a chef for 25 years. I have been an industrial designer for eight years I have a great knowledge in both respects. I would like to help others reach their goals in either industry.

Food service company. Catering, and menu planning consultant. Personally created new catering menus for local markets and private clients. Large catering events, and family gatherings. Menu testing for cookbook partnership with Chef Peter Goodbody, and New York Deli’s cook books.
Alfalfa’s/Wild Oats markets September 1995-2000
Performed all duties in food service. Created new hot food system, including new wood fired oven, and new menus for Deli and Food departments. Created many new recipes which are staple to business today. Specialized in setting up new system of hot cases, and European fresh foods cases.
Worked in Butcher shop creating new cuts, and implementing new recipes for marinades.
